Lazy Shakshuka

Poached eggs in spicy tomato sauce.

Ingredients

  • 4 jalapeno peppers, diced
  • 1-2 medium onion, diced
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 1 28oz can crushed tomatoes
  • 4 eggs
  • Seasonings:
    • season salt, to taste
    • 1 tsp salt
    • 1 tbsp dried oregano
    • 1 tbsp dried basil

Preparation

  1. In a large frying pan, bring olive oil to medium heat. Add the peppers and a pinch of salt. Stir fry for about 3 minutes.
  2. Add the onions and stir fry until translucent.
  3. Add garlic, oregano, and basil. Fry until fragrant, about 1-2 minutes.
  4. Bring the temperature down to simmer, add the crushed tomatoes, and mix well. Add season salt to taste.
  5. Simmer for 20 minutes, stirring occasionally.
  6. Make 4 wells in the sauce and crack an egg into each. Cover the corners of the whites with sauce. Cover and simmer for 5-6 minutes. Serve.
