Poached eggs in spicy tomato sauce.
Ingredients
- 4 jalapeno peppers, diced
- 1-2 medium onion, diced
- 4 cloves garlic
- 2 tbsp olive oil
- 1 28oz can crushed tomatoes
- 4 eggs
- Seasonings:
- season salt, to taste
- 1 tsp salt
- 1 tbsp dried oregano
- 1 tbsp dried basil
Preparation
- In a large frying pan, bring olive oil to medium heat. Add the peppers and a pinch of salt. Stir fry for about 3 minutes.
- Add the onions and stir fry until translucent.
- Add garlic, oregano, and basil. Fry until fragrant, about 1-2 minutes.
- Bring the temperature down to simmer, add the crushed tomatoes, and mix well. Add season salt to taste.
- Simmer for 20 minutes, stirring occasionally.
- Make 4 wells in the sauce and crack an egg into each. Cover the corners of the whites with sauce. Cover and simmer for 5-6 minutes. Serve.
