Too-fatty burritos that are a good quick lunch.
Ingredients
- 1 1/2 lb ground beef (80% lean)
- 2 medium onions, diced
- 14oz can of low-fat refried beans
- Several large tortillas
- Shredded cheddar cheese
- Seasonings (all to taste):
- Salt
- Garlic powder
- Cumin
- Harissa (substitute with chili powder + cayenne)
Preparation
- In a large pan, start browning the beef over medium-high heat.
- Add the diced onions after a couple minutes, and stir-fry(?) until the onions are translucent. Add all seasonings here.
- Add refried beans, and stir until well-combined. Remove from heat.
- Place a few ounces of the filling on a tortilla. Add shredded cheese and any other toppings. Roll the burrito closed. Serve
Notes
I think this recipe works really well for making a lot of filling, and then making burritos over the next few days. It’s quite fatty because of the 80% ground beef, and this can sit a little heavy; I’d recommend having some fresh vegetables on the side.
